Heat olive oil in a large pot, add onions, carrots celery and some salt and pepper , stir frequently over a medium – high heat until veggies begin to soften
Add the bay leaf and tomato puree and cook for another minute
Add in beans, cherry tomatoes and stock and bring to a simmer
Add spaghetti and cover for 10 minutes
Add salt and pepper as desired
Serve with grated parmmesan and warm crusty bread
