Lentils – the perfect legume



Here is some exciting news for lentils and all other pulses. The United Nations has declared 2016 as the International Year of the Pulses. The aim is to increase awareness globally that pulses are a primary source of protein and other essential nutrients. Finally these little nutritional powerhouses will get the recognition they deserve.

Now is the time to learn, starting with lentils. From salads to spreads to easy side dishes, lentils are a great addition to your diet. Some of the many benefits of lentils include lowering cholesterol, heart health, digestive health, stabilising blood sugar levels, good source of protein and iron, increase in energy, virtually no fat and very low in calories.

This recipe for spicy / sweet crispy lentils is fantastic and will get your whole family addicted. You can serve them sizzling warm straight from the pan or put them in the fridge and add them to salads or soups.

Crispy lentils

Ingredients

1 cup Pouyoukas lentils

Black pepper and salt to taste

1 teaspoon extra virgin olive oil

1 teaspoon balsamic vinegar (optional)

 

Method

Cook Pouyoukas lentils as per pack instructions. Rinse and drain excess water and pat dry using paper towel.

Warm a large pan on high heat and add 1 teaspoon of olive oil.

When oil is hot, add the lentils. Move them around and let them sizzle in the pan. They will start to plump up and look like they are about to pop.

After about a minute add fine black pepper and salt.

You will know when the lentils are ready when they look nutty and toasty and the edges are brown.

 

Another option is to add a teaspoon of balsamic vinegar for a sweet and earthy taste before removing them from the pan. This will make the lentils slightly softer.

Continue cooking until all the liquid is absorbed
